Description LactoDigest F 100K is a ß-galactosidase produced by the fermentation of a non-genetically modified strain of Aspergillus oryzae. The lactase hydrolyzes the ß-1,4-glycosidic bonds (linkages) in lactose; releasing an equal molar mixture of glucose and galactose. The food grade powder contains no chemical preservatives. Usage Astrolact Digest F100k is applicable for the hydrolysis of lactose in low pH, acidic milk and dairy products (pH 3.5- 5.5), in treatments for lactose intolerance, and in the formulation of digestive aids and supplements. Enzyme requirements and performance are generally dictated by the physical and chemical properties of the substrate, the substrate concentration, the desired degree of hydrolysis, and the catalytic environment (Temperature, pH, reaction time, etc.). In consideration of your process and processing conditions, or the diet of the targeted market, conduct tests to establish and optimize use. In dietary aids and supplement applications initially evaluate Astrolact Digest F100k: • 90 mg (9,000 FCC LacU) per dose For the hydrolysis of lactose in milk and dairy products initially evaluate Astrolact Digest F100k: • 0.10-0.20% based on the dry weight of lactose [1.0-2.0 kg/metric ton lactose dry solids basis (DSB)]. Just before use, dissolve one (1) part Astrolact Digest F100k Just before use, dissolve one (1) part in nine (9) parts potable water with gentle agitation. Add the enzyme solution to the reaction vessel with continuous agitation to ensure homogeneous enzyme distribution in the lactose substrate solution. In general, a higher enzyme dose will be required when reaction temperatures are lower or when the reaction time is decreased: 1. The rate of substrate (lactose) hydrolysis is proportional to the enzyme concentration when reaction conditions are optimal and the substrate concentration is in excess. In such cases, doubling the enzyme dose will hydrolyze an equivalent quantity of substrate in one-half the time or twice the quantity of substrate in the same period of time. 2. Up to the temperature of enzyme denaturation and inactivation a higher enzyme dose will be required when process temperatures are lower or when the reaction time is decreased. In such cases, decreasing the process temperature 10°C (18°F) or shortening the reaction time onehalf will necessitate doubling the enzyme dose. Conversely, increasing the process temperature 10°C (18°F) or doubling the reaction time will decrease the enzyme dose one-half.
